Hello! So we are finally in August. Palisade peaches are in, Olathe corn is nice and sweet, Rocky Ford melon is.... almost here.
This week we begin our Dining at Dusk features on Tuesday and Thursday night. This is a special menu repeated once to be served in courses straight from the kitchen. Seems like it is pretty much full as of this writing but there are almost always last minute cancellations so if you couldn't get in, try again.
This menu runs the same days as our Social menus and so of course that will also be served in the tent on Tuesdays and Thursdays. What I really hope is that by 5:30 the heat will have eased off enough to make this a fun and enjoyable event. As always we are simply trying to keep things fresh and different, we also want our own staff to keep sharp and remember the level of service that will be asked of them when we reopen the dining rooms.
The menu this week is simply fantastic. Finally we are serving some Wild Alaskan King Salmon on both Monday and Sunday. Also called Chinook Salmon these delectable treats are only available in warmer months and are not farmed in America. Wild King salmon has a dense, meaty texture, a rich, fatty consistency, and a full, fresh fish flavor with a hint of sweetness. King salmon fat can be so creamy that a sushi-grade salmon belly is considered on par with the delicacy of sushi-grade tuna belly. And the taste of King salmon can stand up to intense cooking methods, such as charcoal grilling and wood roasting, as well as pronounced spices and rich sauces, without losing its own inherent flavor. This is really nice and will probably only be available for another month or so.
Also on the menu are a Bison Prime Rib on Wednesday and Beef Prime Rib on Friday. We have Wagyu Beef Tenderloin on Monday and are serving Carved Colorado Rack of Lamb at Sunday Brunch.
I am currently working on the final copy of our Wine menus to be introduced in late September and of so if you have a favorite wine, beer, or spirit please let me know and we will consider it, I expect the bar menus to have a lot of changing items like weekly wines, daily cocktails, and a lot of tastings to familiarize you with our offerings.
