Hello from Vacation! Sorry to say that I will be away this week but the good news is that Brenda, Victor, Alberto and David have things well in hand and will be making sure you all stay well fed. Thank you for all the compliments we received about Independence Day in the Tent and how delicious the food was. My personal favorite was the Patriotic Margarita that Brenda created for us but the Bacon wrapped Hot Dog really hit the spot.


So this week we are replacing the floor in the kitchen. While I am relaxing on the Beach, David and Brenda will be working without an office, coolers, freezers, ice machine, or easy access to the Hive or Tent. No worries, I have faith in them but the week might look a little different. For starters we are going to be using the Pool Patio Grill during Lunch to make sure we can get hot food to residents easily. Just like on the 4th of July there will be a tent set up for people who choose that option but of course it is self service. Just ring in a meal credit in the Hive and help yourself. That menu will be separate from what is offered in the Tent and for takeout so please check Touchtown for what is being offered. The Hive itself will be more limited in offerings as we can't easily replenish anything and have limited abilities to prepare and hold food. Hopefully these changes will have a minimal effect on resident food and only David will be pulling out his hair. Please be patient and understanding as all the staff will be under an extra strain.

Mango Gazpacho

For menu offerings in the Tent this week I recommend the Beef Tenderloin, Prime Rib and Rack of Lamb, not only because they are delicious (they are) but also because, in my experience, carved items are the way to go for staying fresh and not drying out. The Broiled Grouper sounds delicious for a hot day and the Shrimp Scampi is always a correct choice. If you are looking for a light option I would of course start with the Mango Gazpacho every day, Shrimp Cocktail is low in fat, the broiled Halibut, Baked Tilapia, Pan- Seared Salmon, or Roasted Chicken (white meat) would be great.


As much as we are enjoying the Dining outdoors we are all looking forward to the new restaurants that will be opening (including the air conditioning in those spaces). I know I sound like a broken record but things will be so much better. We all realize we need to break an egg or two to make a good omelet, and so I do expect a few surprises and changes. I am becoming wary of providing too many details since some things are still uncertain but, rest assured, I will try to keep you as up to date as possible.


David will still be holding Culinary Corner this week and next but you won't see a blog entry from me until at least the 22nd. Have a great week!
